Cloves are the dried, unopened flower buds of an evergreen tree native to the Spice Islands but now cultivated in Southern India. They are intensely aromatic and have been a highly prized commodity in the spice trade for centuries. Their power comes from eugenol, an essential oil that gives them their strong aroma and potent antiseptic and pain-relieving properties.
