Overview

Annatto seeds come from the Achiote tree, which is native to tropical regions of the Americas but now cultivated in India. The seeds grow inside a spiky, heart-shaped fruit and are covered in a vibrant reddish-orange pulp. This pulp contains bixin, a powerful carotenoid pigment that is extracted to create a natural and safe alternative to synthetic food dyes.

Annatto is primarily used as a natural food colorant, imparting a bright yellow-to-reddish-orange hue to foods. In traditional medicine, it is valued for its antioxidant properties. The leaves are used to treat skin problems and liver issues, while the seeds are used for their expectorant and astringent qualities.

For Natural Food Coloring: Infuse the powder or whole seeds in warm oil or water, then strain the liquid. Use this colored liquid to impart a beautiful golden-orange color to rice, sauces, and marinades.
