Overview

Tragacanth Gum is a natural gum obtained from the dried sap of several species of Middle Eastern legumes. The sap drains from the root of the plant and dries into crystalline “tears.” When soaked in water, these crystals absorb a large amount of liquid and swell into a cool, soothing, jelly-like substance, which can then be added to drinks and desserts.

It is the ultimate summer herb, used to prevent heatstroke and cool the body from within. It is a demulcent, soothing the digestive tract and providing relief from constipation. It is also considered a Balya herb, giving strength and stamina, and is often used to help with weakness and fatigue.

For a Cooling Summer Drink: Soak a small piece of Gond Katira (the size of a pea) in a cup of water overnight. The next morning, it will have swelled into a soft jelly. Mix this jelly into milk, sherbet, or lemonade for a refreshing and body-cooling drink.
